INSTRUCTIONS

1.Cook the rice: 

Rinse the rice thoroughly and cook it according to package instructions. Alternatively, use 3 cups of leftover cooked rice for a quicker meal.

2. Temper the spices: 

Heat oil in a pan or kadhai over medium heat. Add the mustard seeds and let them splutter. Once they pop, add the urad dal and chana dal, frying until golden brown.

3. Infuse the flavors:

Throw in the red chilies, curry leaves, and ginger, sautรฉing for a few seconds until fragrant. Then, add the turmeric powder and salt, stirring to combine.

4. Zest it up:
